Ham and mint omelet roll

A cute and quick idea for an aperitivo! Ham and mint omelet roll.

Positive: Mint leaves add a refreshing taste. Great finger-food. 5 min prep, 10 min baking.

Negative: If you cook the omelet for too long it might be a bit dry. You can either replace ham with creamy cheese or just add it.


  • 2 eggs
  • 10 fresh mint leaves
  • ham (2-3 slices cut thinly)


Chop up mint leaves very thinly. Break eggs in a bowl and beat them. Add mint and season with salt and pepper.

Heat a large pan (a crepe pan is better, as a French person I couldn’t live without it!) previously greased with oil on medium-low heat. Pour egg mixture, it must make a really thin layer, and bake for 5-10 minutes covering with a lid.

When your omelet is ready, place on a cutting board and wait 2 minutes because you don’t want to burn yourself. Once it safe to touch, place ham slices on top of the omelet to cover it. Start rolling it towards the other side into a tight tube. Cut your rolls in diagonal and add a toothpick to fix them (also easier to grab!). Serve warm or cold.

My advice: you can try with fresh basil instead of mint, or cream cheese instead of ham for a vegetarian version.
