How to use leftover pasta?

What to do with leftover pasta? This crunchy baked carbonara pasta recipe is actually the best way to use leftover pasta. I tried 3 different ways: without lardons, with lardons and topped with breadcrumbs, but my favourite one is with lardons and no breadcrumbs.

Positive: It tastes like carbonara pasta, slightly crunchy on the outside and chewy in the middle.

Negative: You will eat them like biscuits…


  • a handful of cooked lardons (bacon cut into tiny pieces)
  • 1 egg
  • parmesan cheese for tastiness ( I used 20 g)

In your pantry:

  • 150 g dry pasta (cooked)
  • dried thyme (optional)


Either use leftover pasta or cook pasta as indicated on the packaging and drain.

Preheat oven at 200°C.

In a salad bowl, add the egg, grated cheese and a teaspoon of thyme if you like. Stir well. Add cooked pasta and combine with a fork.

Cover a baking tray with parchment paper. Wrap some pasta around the fork and make some nests on the baking tray. Flatten as much as possible.

Sprinkle some cooked lardons or keep it vegetarian. (I tried with breadcrumbs on top as well, but because the pasta get crispy I prefer to keep it smooth).

Repeat process with the remaining pasta. Bake in oven for 10 minutes at 200°C and change to grill function for another 5 minutes or until pasta nests are slightly golden.

Can be served warm with a salad or cold as a starter.

My advice: I had only linguine to make them but I’m pretty sure spaghetti would work even better!
