One pasta, 3 ingredients. Broccoli, garlic and chilli make this pasta dish sweet, strong and delicately spicy at the same time.
Pasta: linguine o spaghetti (200 g)
- 1 small broccoli (250 g)
- 2 garlic cloves, sliced thinly
- 1 teaspoon red chilli flakes
In your pantry:
- extra-virgin olive oil
- salt, pepper
Cut broccoli in half, separate florets in bite-seized chunks and leave out trunk. Wash carefully.
Cook broccoli about 5 minutes in simmering water or until tender.
In a frying pan, heat 3 tablespoons of olive oil, add sliced garlic, 1 teaspoon of red chilli flakes and sautéed for 2-3 minutes on medium heat until garlic turn golden brown.
When broccoli is cooked, using a slotted spoon add it to the frying pan with a ladleful of cooking water and keep on low heat. Season with salt.
Bring the remaining cooking water to a boil again and cook pasta as indicated on packaging.
Once pasta is cooked, add it to the broccoli pan with 3 other spoons of olive oil and stir well to combine the flavours.
Serve with freshly grounded black pepper.
My advice: A simple, light and delicious pasta dish. Garlic and chilli enhance exquisitely the broccoli flavour.
